Instructions
In a medium saucepan over medium heat, add the oil. Once the oil is shimmering, add the onions and sauté until translucent, about 3 minutes. Add the bell peppers and garlic and continue cooking until fragrant, about 2 minutes. Season with the salt. Add the tomatoes, carrots, brown sugar, apple cider vinegar, curry powder, and curry leaves. Reduce the heat to low and continue cooking until the vegetables are tender and caramelized, about 10 minutes. Add the tomato sauce and continue cooking until the mixture thickens, about 5 minutes. Add the baked beans. Taste for seasoning and adjust as needed.View original recipe
