ELEPHANT garlic confit
Serves 1015 mins prep120 mins cook
Receiving a giant elephant garlic in a grocery delivery (instead of the regular size) inspired this GIANT garlic confit. Elephant garlic is a different species with a much milder flavor, not a direct substitute for regular garlic but fun to experiment with.

Preheat oven to 250 degrees F. In an oven safe baking dish, add in garlic cloves, olive oil, and thyme. Ensure the cloves are fully submerged in oil.
