What you need

oz parmesan cheese

tbsp dijon mustard

fl oz lemon juice

cup extra-virgin olive oil

bunch romaine lettuce

tbsp anchovy paste

burrito-size tortilla

tsp worcestershire sauce
tsp fresh ground black pepper

clove garlic clove
lb chicken breast

slice sourdough bread

egg yolk
Instructions
â˘Preheat oven to 400F. â˘Pat the chicken cutlets dry, and season liberally with salt and pepper. Heat a couple tbsp olive oil in a large pan over medium. Seat the chicken breasts on both sides until lightly golden and internal temperature reads 160F. Remove from heat and set aside. â˘On a parchment-lined baking sheet, lay out the cubes of sourdough. Drizzle on some olive oil and mix to coat the bread. Bake for about 20 minutes, or until brown and crispy. Set aside. â˘Make homemade Caesar dressing - On a cutting board, combine the minced garlic with about 1 tsp kosher salt. Use a knife at an angle to mash the garlic and salt into a paste. Put the garlic & salt combo in a large bowl then add in the anchovy paste, egg yolks, Dijon mustard, lemon juice, and Worcestershire. Whisk to combine, then slowly drizzle in about 1/2 cup olive oil while still whisking. A thick and creamy dressing should form. Add in about 1/3 cup freshly grated Parmesan and stir. â˘On a large cutting board, lay down the chopped romaine, croutons, cooked chicken, Caesar dressing, and fresh sprinkle of grated parm. Use a sharp knife to cut everything up and combine it in very small pieces. â˘Scoop the salad into the tortilla wraps, and roll them like burritos. Serve and enjoy immediately!View original recipe
