What you need

tbsp olive oil

cup rice wine vinegar

brussel sprouts

shallot

cup nutritional yeast

cup fresh spinach
kale

tsp kosher salt

cup fresh basil leaves

cucumber

clove garlic clove

lemon juice

carrot

cup peas

scallion greens

scallion

cup raw cashews
Instructions
Add the kale to a large salad bowl, then drizzle with the olive oil and sprinkle with the salt. Massage the kale for a few minutes, until it just begins to soften. Add the Brussels sprouts, cucumber, carrots, peas, and scallion whites. Add the shallot, garlic, spinach, basil, olive oil, rice wine vinegar, lemon juice, cashews, nutritional yeast, and scallion greens to a blender and blend until the dressing is bright green and slightly creamy, but not too thick. Drizzle your desired amount of dressing over the salad and toss to coat. Serve as-is or with tortilla chips for scooping. Enjoy!View original recipe
