What you need

tbsp lemon juice

tsp kosher salt

cup fresh mozzarella

pinch red pepper flake

tbsp mayonnaise

cup sharp cheddar
cup fresh parmesan cheese

slice sourdough bread

cup fresh basil leaves

cup extra-virgin olive oil

slice prosciutto

tsp freshly cracked black pepper
Instructions
1. In a small pan over high heat, add the pine nuts and toast for about 5 minutes, shaking/stirring frequently, until darkened but not burnt. Set aside. 2. In a food processor, combine the toasted pine nuts, Parmesan, lemon juice, 1 cup basil leaves, salt, pepper, and olive oil. Pulse until a thick pesto forms. Taste for seasoning. 3. On one slice of bread, layer the shredded sharp white cheddar, then the prosciutto slices, followed by the mozzarella slices. Sprinkle on a pinch of crushed red pepper flakes and a few fresh basil leaves. Drizzle a hearty spoonful of the homemade pesto sauce over the fillings. 4. Place the other slice of bread on top to complete the sandwich. 5. Heat a cast iron skillet on medium heat. Spread half of the mayonnaise on one side of the sandwich. Place the sandwich mayonnaise side down in the skillet and press down with a sandwich press or smaller pan. Cook for 5-7 minutes, or until the bread is deep golden brown. 6. Spread the remaining mayonnaise on the other side of the sandwich, then carefully flip it and repeat the cooking process until that side is also golden brown. 7. Cut the sandwich in half diagonally and enjoy immediately!View original recipe
