Instructions
Wash and peel carrots into ribbons. Finely slice scallions and mince garlic cloves. Add all ingredients (carrots, scallions, garlic, soy sauce, rice vinegar, gochujang, sesame oil, gochugaru, granulated sugar, sesame seeds, and optional kimchi) into a large bowl.
