What you need

tsp garlic powder

tbsp dried basil
lemon

clove garlic clove

tbsp olive oil

white onion

cup full-fat cottage cheese

cup fresh spinach
cup fresh parmesan cheese

lb pasta

cup peas
Instructions
Heat a large pot of salted water until boiling. Cook the pasta until al dente. Reserve about a cup of pasta water. Drain pasta and set aside. Heat olive oil in a large pan over medium. Add in the onion and cook until softened 5-7 mins. Add in 1 cup of the frozen peas, plus the minced garlic. Stir until fragrant, about 1 minute. Add in the spinach, cottage cheese, lemon juice, and Parmesan. Sprinkle in some garlic powder and dried basil, to taste. Pour this mixture into a blender plus about 1/2 cup pasta water and blend until smooth. Add more pasta water if needed. In a pan over medium heat, add in the cooked pasta plus the sauce. Add in the remaining 1/4 cup peas and stir to evenly coat the pasta. Once the peas are cooked through and the sauce is hot, serve into bowls. Garnish with extra Parmesan. Enjoy!View original recipe
