Loaded Potato Skins

What you need

cup sour cream

fl oz olive oil

fl oz hot sauce

bunch fresh chives

jalapeno

oz sharp cheddar

scallion

hass avocado

bacon

russet potato
Instructions
Preheat oven to 400F. Line 2 baking sheets with foil. Place the potatoes on one of the sheets and drizzle with olive oil. Rub around the potatoes evenly, then sprinkle some salt on them. Use a fork to poke several holes in each potato, then place into the oven to bake for ~1 hour, until inner flesh is soft. Meanwhile, lie the bacon strips on the other foil lined baking sheet. Bake for ~25 minutes, until crispy but not burnt. Reserve bacon fat, and cut the cooked bacon into little bits. When the potatoes are done, carefully cut them lengthwise into 2-3 strips per potato. Scoop out some of the flesh from each strip, leaving enough of a rim and underneath to support the toppings. Raise oven temp to 450. Brush each potato skin on all sides with some of the bacon fat. Fill each skin with plenty of the shredded cheddar, then place them back on the baking sheet. Bake about 10 minutes, or until cheese is bubbly and potatoes are crispy. Remove from oven. Top the cheesy potato skins with bacon bits, avocado, jalapeño, scallions. Serve with sour cream, chives, and hot sauce. Enjoy!View original recipe
