Fried Potato Flautas

What you need
salsa verde
fl oz vegetable oil

bunch fresh cilantro

cup sour cream

butter

corn tortilla

radish

cup cabbage

oz oaxaca cheese

cup Crema Mexicana

yukon gold

fl oz mayonnaise
Instructions
Bring a large pot of water to boil over high heat. Add in the potatoes to cook for about 15 minutes, until fork tender. Drain and set aside. In a large bowl, add in the cooked potatoes, butter, sour cream, crema, and kosher salt to taste. Use a metal whisk or potato masher to smash the potatoes until smooth. Add in the Oaxaca cheese and stir until evenly combined. Heat a large skillet over high, and place the tortillas on to warm up. Cook for about 2 minutes, carefully flip them, and then cook for about a minute on the other side. Remove from pan. In each tortilla, add a heaping spoonful of the mashed potato mixture. Fold the tortillas in half, closing the potato mixture in. Heat oil in a large pot, until it reads 350 degrees F. Carefully add in the tortillas and fry about 15 minutes, until deep golden brown and crispy. Remove and place on a paper towel-lined plate. Immediately season with some kosher salt. Top the flautas with kewpie mayo, salsa verde, radish slices, cabbage, and cilantro. Enjoy immediately!View original recipe
