Tater Tot Pickle Potato Salad

Transform frozen tater tots into a delicious and tangy pickle potato salad! This recipe uses smashed crispy tater tots combined with a creamy Greek yogurt and mayonnaise dressing, fresh dill, minced garlic, and plenty of diced pickles and scallions for a unique twist on a classic.

What you need

tsp kosher salt

tbsp whole grain mustard

oz tater tot

tsp red chili flakes

tsp black pepper

persian cucumber

tsp onion powder

clove garlic clove

Kosher Dill

tbsp mayonnaise

tsp garlic powder
cup plain greek yogurt

tbsp pickle juice

cup fresh dill

Instructions
Preheat oven to 425F. Place the tater tots on a large parchment-lined baking sheet. Bake for 15 minutes, then remove from the oven. Use a cup to smash the tater tots into flat discs. Bake for another 20 minutes, or until deep golden brown and crispy. Remove from oven and set aside. In a large bowl, combine the rest of the ingredients except for the cucumber, dill pickles, and scallions. Whisk to evenly mix the wet mixture. Add the cooked crispy tater tots into the wet mixture. Add in the cucumbers, dill pickles, and scallions. Gently toss to evenly coat with the wet mixture. Serve and enjoy!View original recipe
