What you need

oz cotija cheese

radish

tsp black pepper

fl oz hot sauce

fl oz olive oil cooking spray

fl oz lime juice
cup salsa verde

oz oaxaca cheese

flour tortilla

cup cilantro

bacon

clove garlic clove

tomato

red onion

hass avocado
egg

jalapeno
Instructions
Preheat oven to 425F. Place bacon on a foil-lined baking sheet and bake for 20-25 mins, until cooked through and slightly crispy. When done, place on a paper towel-lined plate and set aside. Make guacamole: in a large bowl, add avocado, onion, garlic, tomato, jalapeño, cilantro, and lime juice. Season with salt & pepper, stir to gently mix, and taste for seasoning. Set aside. Lay down 3 of the tortillas, and spread the Oaxaca cheese in a thick layer on each. Cover the cheese with the other 3 tortillas. Spray both sides with cooking spray. Either air fry or bake the quesadillas until golden brown and cheese is gooey inside. Once done, cut into small triangles. Heat cooking spray in a nonstick pan over medium heat and crack in the eggs. Fry until sunny-side up with just the whites cooked through. Season with salt & pepper, remove from heat, and set aside. Assemble chilaquiles: lay down the quesadilla triangles on two plates, then pour salsa verde over the top. Top with the fried eggs, a large spoonful of the guacamole, some pickled onions, cotija cheese, cilantro, and hot sauce. Enjoy!View original recipe
