Pickle Bread Hot Dog Bun (Low Carb)

A low-carb, crispy, cheesy, and pickle-y alternative to a traditional hot dog bun, inspired by a pickle bread sandwich. This recipe creates two 'buns' perfect for Chicago-style hot dogs or any of your favorite toppings.

Preheat oven to 400F. Line a baking sheet with parchment. Lay the pickle slices on a paper towel and use another paper towel on top to pat them dry. Create 2 piles of shredded cheese on the baking sheet, and spread the piles out a bit into two bread-sized squares. Lay the pickles on top of the cheese, then sprinkle on a thin layer of more cheese. Bake for about 20 minutes, until cheese is lightly golden. Remove from oven when done and allow to cool slightly. Wipe up any liquid with a paper towel. Scrunch up two sheets of aluminum foil and place the cheese/pickle slabs onto them upside down, so the cheese hardens into an open bun shape. Fill with your favorite hot dog and toppings.
