Zucchini Waffles

What you need
cup fresh parmesan cheese

cup all purpose flour

fl oz olive oil cooking spray

cup fresh parsley

tsp kosher salt

zucchini
tbsp plain greek yogurt

tsp freshly cracked black pepper
egg
Instructions
1. Use the coarsest side of a box grater to grate the zucchinis. 2. Add the shredded zucchini into a large bowl with the egg, parmesan cheese, flour, parsley, Greek yogurt, salt, and black pepper. Stir to evenly combine. 3. Preheat your waffle iron and spray it with cooking spray. 4. When hot, pour in enough zucchini mixture for 1 waffle and close the iron. 5. Cook for about 10 minutes (or until deep golden brown), and repeat until your batter is gone. 6. Serve the waffles with some extra parmesan cheese on top, and garnish with a fried egg and chives.
