Caprese-style Upside Down Tarts

What you need

tsp freshly cracked black pepper

bunch fresh basil

tsp red pepper flake

cup mozzarella balls

heirloom tomato

puff pastry

tbsp balsamic glaze
egg
Instructions
Preheat oven to 350 degrees F. On a parchment lined baking sheet, drizzle 3 small circles of balsamic glaze. On top of each circle of balsamic glaze, place down three slices of tomato. Season those with kosher salt, pepper, and red pepper flakes. On top of those, place 6 or so mozzarella pearls. Place a rectangle of raw puff pastry on top and gently press around the sides to tuck in all the ingredients. In a small bowl, whisk together the egg plus a splash of water. Using a pastry brush, brush the egg wash on the tops of the puff pastry rectangles. Bake for 15-20 minutes, until pasties are golden brown. Remove from oven and garnish with basil.
