What you need

cup powdered sugar
lemon zest

tbsp granulated sugar

fl oz fresh lemon juice

cup lowfat greek yogurt

cup strawberry jam

cup all purpose flour

tsp vanilla extract
tsp baking powder
egg

pinch kosher salt
Instructions
1. In a large bowl, beat the egg; then add in 1 cup of the Greek Yogurt, and the flour, sugar, baking powder, vanilla extract, and kosher salt. Mix well until the dough is evenly combined and thick. 2. In a large pan with high sides, add vegetable oil until there are about two inches of oil in the pan; heat it over medium-high. When the oil is heated to 350ºF, using a spoon, carefully slip scoops of the donut dough into the oil. Allow them to fry until golden brown on all sides, then move them to a paper towel-lined plate. 3. In a small bowl, add the remaining ¼ cup Greek Yogurt, plus the lemon zest and juice. Stir to combine. 4. Using a sharp knife, slice a small slit into the doughnuts. With a small spoon, add a bit of the berry jam and yogurt/lemon mixture into each doughnut.
