Croque Madame Boat Ingredients (for 5 servings): -2 tablespoons unsalted butter -2 tablespoons flour -1 cup whole milk -1 bay leaf -½ teaspoon Kosher salt, plus more for seasoning -¼ cup freshly grated Parmesan cheese -1 large loaf French or Italian bread -5 slices good quality ham -1 cup freshly grated Gruyere cheese -cooking spray -5 eggs -freshly cracked black pepper, for garnish -chives, finely chopped, for garnish Directions: -Preheat oven to 375°F. Make the bechamel sauce. In a pan over medium heat, melt the butter. Whisk in the flour and cook, stirring constantly, for about 2 minutes, being careful that the mixture doesn’t brown. Pour in the milk and stir to incorporate. Add in the bay leaf and cook, stirring occasionally, until you have a thick soup-like consistency, about 10 minutes. Remove the bay leaf, add in the Parmesan cheese, and mix it in. Remove from heat and set aside. -Cut the top off of the bread and place it on a large foil-lined baking sheet. Slather the bechamel sauce evenly over the open bread. Top with the ham slices and gruyere, spread evenly. Place into the oven to bake for about 10 minutes, until cheese is melted. Turn the oven up to broil and bake until the cheese turns a light golden color. -Coat a pan with cooking spray and heat over medium-high. Crack in the eggs to fry for a sunny side up preparation. Place the cooked eggs on top of the melted cheese on the bread. Season each egg with kosher salt and pepper, then garnish with fresh chives. Cut into 5 even servings and enjoy!
