A fun handheld twist on classic Caesar salad, featuring crispy air-fried chicken tenderloins served in butter lettuce cups with Caesar dressing, Parmesan, and scallions.

What you need

tbsp kosher salt

head butter lettuce
lb chicken tenderloins

cup corn flakes

cup all purpose flour

fl oz caesar dressing

fl oz olive oil cooking spray

bunch scallion

oz parmesan cheese

Instructions
1. Pat the chicken tenderloins dry. Add flour into a bowl and season liberally with salt and pepper. Set up a dredging station with the flour bowl, the eggs in a separate bowl and the crushed corn flakes in a third bowl. Dip the chicken tenderloins into the flour, then egg; and then coat them evenly with the corn flakes. Set aside. 2. Spray the tenders with cooking spray and add them spaced out to the basket of an air fryer. Air fry on 350F for about 12 minutes. Use a meat thermometer to check that the internal temp is 160F before removing. Move to a paper towel lined plate and season with salt. 3. Lay out the butter lettuce pieces. Add a chicken tender into each piece. Drizzle on the Caesar dressing, then grate on Parmesan cheese. Garnish with scallions and enjoy!View original recipe
