Sheet Pan Quesadillas

Easy Sheet Pan Quesadillas made with shredded rotisserie chicken, diced tomatoes with green chilis, red onion, corn, black beans, scallions, taco seasoning, and two types of cheese, all baked together on a sheet pan.

What you need

slice cheddar cheese

tbsp butter

rotisserie chicken

cup cooked black beans

oz shredded mexican cheese blend

red onion

oz taco seasoning

scallion

flour tortilla

cup sweet corn
Instructions
1. Preheat oven to 375F. 2. In a large bowl, combine the chicken, diced tomatoes, red onion, corn, black beans, scallions, and taco seasoning. Stir to evenly combine, then add in the Mexican cheese. Stir to mix, and set the mixture aside. 3. Melt half the butter and brush it on a large sheet pan. Lay down the tortillas around the sheet pan, covering the entire thing with plenty of tortilla excess hanging off the side. 4. Line the cheese slices in an even layer on the tortillas, then pour the chicken mixture on top. Flatten the mixture, then fold the tortillas over the mixture to tuck it in. Lay another sheet pan on top and place it all into the oven to bake. After about 10 minutes, melt the other half of the butter and paint it on the top part of the tortillas. Continue to bake without the second sheet tray for another 15 or so minutes, until the tortillas are light golden brown. 5. Flip the sheet pan quesadillas onto a cutting board and carefully cut into 6-9 squares. Serve and enjoy!View original recipe
