Homemade Tomato Soup

I don't know why it took me so long to start making tomato soup homemade… it’s night and day better than canned soup! Highly recommend leveling up your grilled cheese & tomato soup experience with this bad boy. Soup recipe below!

What you need

bunch fresh basil

tbsp extra-virgin olive oil
bay leaf

oz tomato

cup heavy cream

tsp freshly cracked black pepper

clove garlic clove

bunch fresh thyme

tsp red chili flakes

cup chicken broth

Instructions
Heat oil in a large pot over medium heat, then add in diced shallot and sauté until softened, about 4 minutes. Add in garlic cloves and cook until fragrant, about 1 minute. Pour in chicken broth and crushed tomatoes. Season with black pepper and red pepper flakes, and add in thyme sprigs and the bay leaf. Bring to a gentle boil and reduce to a simmer. Allow to simmer and for flavors to combine for about 15 minutes. Remove the thyme stems and bay leaf. Carefully pour the soup mixture into a blender and blend until smooth. Pour soup mixture back into the pot over medium heat and stir in the cream. Taste for seasoning and add kosher salt to taste. Serve with fresh basil and enjoy!View original recipe
