What you need

tbsp kosher salt

cup water

oz sharp cheddar

tbsp balsamic glaze

sourdough bread

red onion

tbsp unsalted butter

cup arugula

tbsp cream cheese

lb steak

tbsp granulated sugar

bunch fresh thyme
lemon

tbsp extra-virgin olive oil

cup vinegar

clove garlic clove

jalapeno
Instructions
In a medium pot over high heat, add vinegar, water, and sugar. Mix and cook until sugar is dissolved. In a heat-safe container, add the vinegar mixture and sliced red onion to pickle. Set aside. Salt and pepper the steak. Heat a large sauce pan over medium-high heat and add in the steak to cook. Once seared on both sides, tilt the pan toward you and add in butter, thyme, and minced garlic. Using a spoon, splash the butter mixture onto the steak to baste it. Continue cooking steak to your desired doneness. Let rest for at least 10 minutes. Just before serving, cut into small slices. In a small bowl, mix together Vegemite and cream cheese. Set aside. In a large bowl mix together arugula, lemon juice, olive oil, and salt & pepper to taste. Set aside. Build the sandwich! Take the sourdough bread and layer on the sharp cheddar cheese, fresh jalapeño slices, steak slices, pickled onions, and dressed arugula. Drizzle on balsamic glaze, close up the sandwich, and enjoy!View original recipe
