Spread a thin layer of cream cheese on each piece of bread. Use a vegetable peeler to shave the cucumber into thin strips. Add another layer of cucumber strips, then close the sandwich with the other cream cheese-covered piece of bread. Cut the crusts off the sandwich, then cut the sandwich into thirds lengthwise.
