Tater Tot Muffins with Bacon, Egg & Cheese

A fun and hearty brunch idea featuring crispy tater tot cups filled with scrambled eggs, cheddar cheese, bacon, avocado, scallions, and a drizzle of sriracha.

What you need

tsp black pepper

tbsp milk

Instructions
Preheat oven to 425F. Place bacon strips on a foil-lined baking sheet. Bake for 25 minutes, then place onto a paper towel-lined plate. Once cool enough to handle, rip the bacon into large chunks. Leave oven preheated. Meanwhile, place 5 or 6 frozen tater tots into the holes of a muffin tin. Bake for 10 minutes, until just warmed up. Remove from oven and use a small cup to push the tater tots down into a cup shape. Grate a thick layer of sharp cheddar cheese onto the tater tot cups, then place back into the oven for 20 minutes, until golden brown around the edges. Meanwhile, crack eggs into a bowl and add milk and kosher salt. Whisk until mixed. Heat cooking spray in a small nonstick pan over medium heat, and add in eggs. Scramble until nearly set, then turn off heat and set aside. Taste for seasoning and add extra salt and black pepper to taste. When the tater tots are golden and crisped up, divide the scrambled eggs among them. Grate extra sharp cheddar onto the cooked eggs. Place a few bacon chunks on top of that, then some sliced avocado, scallions, and a drizzle of sriracha. Serve and enjoy immediately!View original recipe
