Tater Tot Caesar Salad Muffins

Turn your tater tots into muffins and stuff them with Caesar salad! Episode 6 of the Chicken Caesar Series. A fun, easy, and healthy twist on classic Caesar salad.

What you need

tsp anchovy paste
bunch kale

tsp worcestershire sauce

fl oz lemon juice

cup extra-virgin olive oil

bunch romaine lettuce

clove garlic clove

pinch kosher salt

cup tater tot
tbsp fresh parmesan cheese

egg yolk
chicken breast

cup panko breadcrumbs
Instructions
Preheat oven 425F. Meanwhile, place 5 or 6 frozen tater tots into the holes of a muffin tin. Bake for 10 minutes, until just warmed up. Remove from oven and use a small cup to push the tater tots down into a cup shape. Make the Caesar dressing. On a cutting board, place the minced garlic and a sprinkle of salt. Use your knife to grind the garlic into a paste. Add half the minced garlic into a bowl, plus the anchovy paste, egg yolk, Dijon mustard, Worcestershire, and lemon juice. Mix well. Going slowly, drizzle in about 1/4 cup of olive oil, while whisking… this should create a thick dressing. Add in about 2 tbsp freshly grated Parmesan and mix that in. Set aside. When the tater tots are golden and crisped up, remove them from the muffin tin. In each tater tot cup, add a small bed of romaine & kale lettuce. Then add in a drizzle of the Caesar dressing, plus a few chicken pieces. Top with extra grated Parmesan and bread crumbs. Serve and enjoy!View original recipe
