What you need

pepper

sweet potato

fl oz extra-virgin olive oil

avocado

lb ground beef

tsp garlic powder

cup shredded cheddar

head red onion

cup cilantro

tsp ground cumin
lime

tomato

jalapeno
Instructions
1. Preheat oven to 425F. Line a baking sheet with foil or parchment. Lay the sweet potato slices on the baking sheet and coat them with a thin layer of olive oil. Season with salt and pepper, then bake for about 30 minutes. They should be lightly browned and crisp but not burnt. 2. While the sweet potatoes cook, heat a small bit of olive oil in a pan over medium high. Add in the ground beef and cook, stirring frequently. Season with salt, pepper, the cumin and garlic powder, and continue cooking until fully browned. 3. Make the pico de gallo. In a large bowl, combine the tomatoes, red onion, cilantro, lime juice, and jalapeño. Season with salt and pepper then stir to mix. Set aside. 4. When the sweet potatoes are cooked, turn off the oven and sprinkle on the cheeses. Place back into the oven just until the cheese is melted. 5. Plate the cheesy sweet potatoes and top with the ground beef, pico de gallo, and garnish with avocados. Serve and enjoy!View original recipe
