What you need

tbsp honey

cup extra-virgin olive oil

cup cherry tomato

tsp red pepper flake

cucumber

tbsp dijon mustard

cup green beans

tsp kosher salt

tsp freshly cracked black pepper

tbsp apple cider vinegar

Instructions
Heat a large pot of water over medium-high until boiling. Salt generously, then add in the potatoes to cook. Continue cooking at a gentle boil for about 30 minutes, or until fork tender. Remove the potatoes from the water and set aside, while keeping the water boiling. Carefully add the eggs into the water and boil 8 minutes. Keep the water boiling and remove the eggs once done, immediately setting them into an ice bath. Finally in the boiling water, add in the green beans to cook for about 6 minutes. Strain and set aside. Make the dressing. In a bowl, combine mustard, honey, apple cider vinegar, and lemon juice. Add about 1/2 tsp each of kosher salt, black pepper, and crushed red pepper flakes, and stir to mix everything together. Pouring slowly and while whisking, add in the extra virgin olive oil until a smooth dressing forms. Set aside. On a large serving plate, lay down the cooked green beans, cooked potatoes (quartered), cooked eggs (peeled and quartered), cherry tomatoes, olives, and cucumber. Season with salt and pepper, then drizzle on the dressing. Finish the salad with the Starkist E.V.O.O. Tuna and a garnish of scallions. Enjoy!View original recipe
