STUFFED pickle boats! 🥒🤘🏼 literally the tastiest lunch I’ve had in a while, I stuffed them with my chickpea “tuna” salad and it was divine 🥰 get the recipe below‼️ & thanks for the stuffed pickle idea @shewillevolve

What you need

tbsp kosher salt

dill pickle

shallot

can chickpea

tbsp mayonnaise

green onion

cup fresh dill

tbsp mustard

tbsp red wine vinegar

cup cornichons

tsp red chili flakes

clove garlic clove
cup fresh tomatoes
Instructions
Pour the chickpeas into a large bowl. Use a fork or potato masher to smash them into large chunks. Then, add in the mayo, mustard, vinegar, shallot, green onion, garlic, tomatoes, cornichons, and dill. Season with salt, pepper, and red pepper flakes. Stir to evenly mix and taste for seasoning. Take the whole dill pickles and cut them in half down the middle. Then cut around the seeded area in the centers and use a small spoon to scoop that out. Stuff the hollowed out pickles with the chickpea salad. Serve and enjoy!View original recipe
