What you need

tbsp kosher salt

oz parmesan cheese

cup chicken broth

tsp red chili flakes

lb pasta

clove garlic clove

cup red wine

tbsp olive oil

can tomato paste

shallot
tbsp squid ink pasta
Instructions
Bring a large pot of water to boil and add in plenty of salt. Cook the pasta until al dente, drain the water (saving some pasta water just in case), and set pasta aside. While pasta is cooking, make the sauce. Heat olive oil in a large pan over medium-high heat, then add in the shallots. Cook the shallots about 3 minutes, until translucent. Add in minced garlic and cook about 30 seconds, until fragrant. Add in tomato paste and cook until it turns a darker color, 5-7 minutes. Pour in red wine to deglaze, and cook until reduced about halfway, 5-7 minutes. Pour in the chicken broth and reduce halfway, 5-7 minutes. Season with salt, pepper, and red pepper flakes. Pour in cuttlefish ink and mix together well, the sauce should be very black! Coat the noodles completely in the sauce, adding in reserved pasta water if itβs too dry. Serve with Parmesan cheese on top. Enjoy!View original recipe
