Spicy Tuna Crispy Rice Waffle

What you need

tbsp sesame oil

ahi tuna steak

tbsp sriracha hot sauce

tbsp green onion

avocado

tsp freshly cracked black pepper

tbsp extra-virgin olive oil

tsp kosher salt

tbsp mirin

tbsp rice vinegar

fl oz olive oil cooking spray

tbsp sesame seed

tbsp mayonnaise

tsp salt
Instructions
In a large bowl, combine cooked sushi rice with rice vinegar, sesame oil, mirin, and salt. Mix to evenly coat rice. Heat a small waffle maker & grease with cooking spray. Fill the waffle maker with half of the rice mixture, and cook in the waffle maker until golden brown and crispy. Repeat with the other half of rice and set the rice waffles aside. Heat olive oil in a cast iron pan over high. Season both sides of the tuna steak with salt and pepper. Sear the tuna for about 2 minutes per side to get a nice rare/medium rare tuna steak. Set aside to rest for 10 minutes. Then cut into small cubes. In a bowl, add the tuna cubes, sriracha, kewpie mayonnaise, green onions, and sesame seeds. Stir to coat the tuna. On the crispy rice waffles, place a thin layer of avocado slices, then the spicy tuna mixture. Garnish with extra green onions and sesame seeds. Enjoy!View original recipe
