A delightful and easy-to-make smashing cucumber salad with a spicy, savory, and slightly sweet Korean-inspired dressing. Perfect as a refreshing side dish or a light snack.

What you need
english cucumber

tsp granulated sugar

tbsp soy sauce
tbsp gochugaru

tbsp gochujang

tbsp sesame oil

tbsp scallion

clove garlic clove

tbsp sesame seed

tbsp kosher salt
Instructions
Use a meat tenderizer or rolling pin to smash the whole cucumber well. Cut into 1 to 2-inch chunks. Place into a large bowl. Sprinkle on kosher salt, making sure to get it in the nooks and crannies. Allow to sit for 10-15 minutes to draw out excess moisture, then squeeze out the liquid. In a small bowl, whisk together rice vinegar, soy sauce, gochujang, gochugaru, sugar, minced garlic, sesame seeds, and scallions until well combined and sugar is dissolved.
