Shrimp Teriyaki Stuffed Avocados with Sushi Rice

Delicious stuffed avocados loaded with sushi rice and flavorful shrimp teriyaki, garnished with cucumber, scallions, sesame seeds, and sriracha. An easy and healthy meal perfect for lunch or dinner.

What you need

tsp kosher salt

tsp black pepper

oz sesame seed

tbsp sesame oil

lb raw shrimp

tbsp soy sauce

cup cucumber
cup sushi rice

cup teriyaki sauce

scallion

hass avocado
Instructions
Heat sesame oil in a large pan over medium. Season the shrimp with salt and pepper, then add to the pan & sauté for about 5 minutes, until just cooked through. Add in the teriyaki sauce to coat the shrimp. Remove from heat & allow to cool slightly. In a large bowl, add in the cooked teriyaki shrimp. Add in about 3/4 of the sliced scallions, plus the cucumber. Stir to mix. In the halved avocados, fill the holes with the cooked sushi rice, then pour on the soy sauce. Top with the shrimp mixture, then garnish with the remaining scallions, the sesame seeds, and sriracha. Enjoy!View original recipe
