Savory Cheesy Mushroom Tarts with Caramelized Onion

What you need

yellow onion

tbsp olive oil

oz cheese
fl oz Hot honey

pinch kosher salt

tsp red chili flakes

puff pastry

pinch black pepper
cup mushrooms
Instructions
In a large pan over medium heat, add in 2 tbsp of the Spanish Olive Oil. Once hot, add in the sliced onions and a hefty pinch of salt. Cook, stirring frequently, until onions are completely caramelized but not burnt (this could take up to 60 minutes). Preheat oven to 375 degrees F. On a parchment-lined baking sheet, add small circles of the remaining olive oil from Spain. On the olive oil, sprinkle salt, pepper, red pepper flakes, and thyme. Top the seasoned olive oil circles with a few mushrooms each, then a rectangle of cheese, and then a dollop of the caramelized onions. Lay a rectangle of puff pastry on top of each pile of ingredients and gently press the pastry down. Use a pastry brush to brush the remaining Spanish Olive Oil on top of each pastry. Bake the tarts for 15-20 minutes, until the tops are light golden brown. Remove from oven and flip them over to reveal the ingredients beneath. Drizzle on hot honey and garnish with extra thyme.
