Salmon & Watermelon Ceviche
✨Salmon & Watermelon Ceviche🍉 follow @alexawhatsfordinner for more easy & fun recipes! 💕 I’m obsessed with this recipe for summer it’s so refreshing and delicious! 🥰 Ingredients: -1 cup distilled white vinegar -1 cup water -1 tablespoon granulated sugar -1 red onion, finely diced -1.5 pounds high quality salmon, cut into cubes (sushi grade if possible) -1/4 cup freshly squeezed orange juice -3/4 cup freshly squeezed lime juice -3 cups watermelon, finely diced -2 jalapeños, finely diced -1/2 cup scallions, finely chopped -1 large cucumber, finely diced -1 bunch of cilantro leaves, chopped -2 avocados, diced -salt and pepper, to taste -corn tortilla chips, for serving Directions: -Start by pickling the red onions. In a medium pan over high heat, mix vinegar, water, and sugar. Stir until the sugar dissolves and remove from heat. Place the diced red onion into a large container and pour vinegar mixture over. Allow onions to pickle while you prep the rest of the ingredients! -In a large bowl, add cubed salmon, orange juice, and lime juice. Cover and place into the fridge to “cook” in the citrus juice for at least 20 minutes and up to an hour. -Meanwhile, cut the rest of the fruit and vegetables. Once salmon has “cooked,” add watermelon, jalapeños, scallions, cucumber, cilantro, and avocado and mix together. Season to taste with salt and pepper, and enjoy with tortilla chips.
