Refreshing Cold Soba Bowl

What you need

cup granulated sugar

bunch soba noodles

cucumber

plum tomato

tbsp sesame oil
Instructions
Pour the sugar and salt over the cucumber slices and toss to evenly coat. Set aside. Heat 1 tbsp sesame oil in a large pan over medium-high. Add in the garlic chives to sauté for about 5 minutes, until softened. Remove from heat and set aside. Bring a large pot of salted water to boil over medium-high heat. Set up a large bowl of ice water. Add the soba noodles into the boiling water, and cook for 4-5 minutes. Immediately drain the noodles and place them in the ice water bath. Remove the soba from the ice bath and place into 2 serving bowls. Pour the sautéed garlic chives evenly on the 2 servings of noodles and gently mix. To each bowl, add in 1 tbsp each Chinese vinegar and 1/2 tbsp each of sesame oil. Top the noodles with some pickled cucumbers and the tomatoes. Enjoy!View original recipe
