Pickled Jalapeño Boats

Pickled jalapeño boats! 🌶️⛵️ another fun, high protein lunch/snack… this time with a lil spice✨ my dad said he grew up eating pickled jalapeños stuffed with tuna salad, and it sounded delish so I whipped up this version. We all loved it! Recipe below‼️

What you need

pinch ground cumin

cup cilantro

tsp salt

pickled jalapenos

red bell pepper

pinch black pepper

tbsp mayonnaise

oz light tuna

cup black beans

cup sweet corn

scallion
Instructions
In a large bowl, combine everything except the 8-10 whole pickled jalapeños. Stir to mix and taste for seasoning. Cut the whole pickled jalapeños down the middle length wise. Use a spoon to scoop out the inside seeds. Stuff the jalapeños with the tuna mixture. Serve and enjoy! Can leave refrigerated for a day or two.View original recipe
