Passover Latke Waffles

What you need

cup sour cream

fl oz olive oil cooking spray

tsp kosher salt

tsp cayenne pepper
tsp fresh ground black pepper

tsp ground cumin

bunch fresh chives

russet potato

tsp paprika

yellow onion

cup matzo meal
egg
Instructions
Add the potatoes and onion to a food processor and pulse until finely chopped and combined. Transfer the chopped potatoes and onion onto a clean dish towel or cheesecloth. Wrap tightly and squeeze over a large bowl to remove any excess liquid. Set the potatoes and onion aside and let the liquid in the bowl sit for about 5 minutes; it should separate into a white starchy layer at the bottom of the bowl and a more liquidy layer on top. Discard the liquid, keeping the starchy layer. Add the potatoes and onion to the bowl with the starch, along with the matzo meal, eggs, salt, black pepper, cumin, paprika, and cayenne. Mix well. Preheat a waffle iron according to the manufacturer’s instructions and grease with nonstick spray. Carefully add about ½ cup of the latke mixture to the waffle maker and close. Allow to cook for about 5 minutes, until deep golden brown and crispy. Remove the latke from the waffle iron and season with salt, then repeat with the remaining latke mixture. Top the latkes with sour cream and chives or applesauce, if desired, and serve warm. Enjoy!View original recipe
