What you need

pepper

oz artichoke hearts

oz chick peas

cup fresh parsley

cup olive oil
cup roasted red pepper

tbsp dijon mustard

tbsp maple syrup

clove garlic clove

cup cherry tomato

cup cucumber

cup brown rice

tbsp lemon juice

cup kalamata olive
Instructions
In a large bowl, combine cooked rice, drained chickpeas, drained artichoke hearts, roasted red peppers, cherry tomatoes, cucumbers, olives, and parsley. Season to taste with salt & pepper. In a small jar, combine lemon juice, olive oil, garlic, mustard, maple syrup, and salt and pepper to taste. Shake & mix well. Add vinaigrette over the salad and mix. Enjoy!View original recipe
