What you need

mini marshmallows

tsp vanilla extract

tbsp brown sugar

tbsp butter

sweet potato

tsp cinnamon

tbsp cream

cup pecan nuts
Instructions
Preheat oven to 400F. Wash the sweet potatoes and poke them each with a fork several times. Microwave them about 8 minutes, flipping halfway through, or until fully softened. Carefully cut the sweet potatoes in half lengthwise, and scoop the inner flesh (leaving about a half inch rim around) into a bowl. Into the bowl with the sweet potato flesh, add in the brown sugar, butter, cream, vanilla, and cinnamon. Stir to evenly mix then set aside. Fill a high-sided pan about halfway with frying oil. Heat over medium high until 350F. Then carefully place in the sweet potato skins. Fry, flipping occasionally, about 10 minutes, or until lightly browned. Set aside on a paper towel-lined plate. Place the sweet potato skins on a parchment lined baking sheet, and fill them with the sweet potato flesh mixture. Top with chopped pecans and a layer of mini marshmallows. Bake for about 5 minutes, or until marshmallows are toasted. Serve and enjoy!View original recipe
