What you need

fl oz black vinegar

fl oz cooking oil

in fresh ginger

clove garlic clove

tsp kosher salt

lb ground pork

tbsp sesame oil

tbsp soy sauce

cup water

tbsp mirin

tsp freshly cracked black pepper

bunch scallion

tbsp sherry wine
Instructions
In a heat safe bowl, add in the ginger and the scallion whites (roughly chopped). Pour in 1/4 cup hot water and allow to steep. Set aside. Meanwhile, into a large nonstick skillet, add in the ground pork, scallion greens (finely sliced), garlic, soy sauce, cooking sherry, sesame oil, mirin, salt, and pepper. Stir to evenly mix. Strain the solids from the steeped water and add the water into the pork mixture. Mix until the water absorbs, then separate the pork into ping pong sized balls spread apart in the pan. Top the balls with a dumpling wrapper each, then place the skillet over medium-high heat. Drizzle a bit of cooking oil into the pan and allow the dumplings to pan sear. Add 1/4 cup water and allow to steam until the water absorbs. Repeat with the water 2 more times. Remove from the heat and peel the dumplings out of the pan. Dip in a mixture of soy sauce and black vinegar. Enjoy!View original recipe
