Latke Tater Tots

Latkes in the shape of tater tots, a revelation inspired by @edithsbk, made at home. Perfect for a Happy Hanukkah.

What you need
cup vegetable oil

bunch green onion

tsp kosher salt

bunch fresh chives

yellow onion

cup sharp cheddar

russet potato

cup matzo meal

cup applesauce
egg
Instructions
Using a box grater, grate the potatoes and onions on the large holes. Place them in a cheese cloth or dish rag. Into a large bowl, wring out the liquid from the potatoes and onions. Allow the liquid to sit for about 10 minutes, then discard while leaving the starchy bottom layer. Into the bowl with the starch, add the shredded potatoes and onions, eggs, sharp cheddar, matzo meal, and kosher salt. Mix to evenly combine. Onto a baking sheet, spread the potato mixture out about 1/2 inch thick. Shape it into a large rectangle then place it into the freezer for about 20 minutes so it’s slightly set. Once slightly set, remove from freezer and cut into small squares (the size of tater tots). Heat about 1 inch oil in a large skillet over medium high. Place the latke squares in, being careful not to overcrowd, and fry until deep golden brown on both sides. Once done, move to a paper towel lined plate. Serve immediately with sour cream, onions & chives, and apple sauce. Enjoy!View original recipe
