Glizzy Sushi Hotdog (Fried Sushi Roll)

Using a clean work surface, lay down the nori sheet. Spread the rice out on the nori sheet into a thin layer, then roll it up into a log. Set up a dredging station with the beaten egg in one plate, and the seasoned panko in the other. Heat oil in a large pan over medium heat. Just when ready to fry, dip the rice log into the egg (evenly coating throughout), and then immediately into the panko bread crumbs. Get a nice layer of panko on the log, then add it into the hot oil. Cook, flipping to the other sides when the panko is golden. Move to a paper-towel lined plate. Cut the log down the middle lengthwise. Stuff with the avocado slices, cucumber slices, salmon & tuna… all spread out. Dress with the kewpie mayo, sriracha, and eel sauce. Garnish with furikake, scallions, and jalapeño. Enjoy!
