What you need

tsp kosher salt

cup parmesan cheese

tomato

tbsp dijon mustard

cup cottage cheese

cup extra-virgin olive oil

clove garlic clove

romaine lettuce

fl oz fresh lemon juice

avocado

bread

cup fresh basil leaves

can tuna

cup pine nut
Instructions
In a food processor, add basil, garlic, parmesan, ½ teaspoon salt, and lemon juice. Pulse to combine, then add in the nuts and pulse until blended. Drizzle in olive oil and blend until smooth. Set aside. Extra pesto can be stored in the fridge for up to a week or in the freezer for 6 months. Also in the food processor, add in tuna, good culture cottage cheese, ½ teaspoon salt, and dill. Combine until very smooth and mousse-like. Set aside. Build the sandwiches. On one piece of bread, spread a hearty layer of pesto. Top with lettuce, then tomato slices and a pinch of kosher salt. On the other piece of bread, spread mustard. Top with the tuna mixture, and spread. Lay out avocado slices. Close the sandwich. Serve and enjoy!View original recipe
