What you need

tsp freshly cracked black pepper

bunch scallion

oz sharp cheddar

tsp kosher salt

oz cooked ham

Instructions
1. Preheat oven to 375F. Grease a muffin tin. 2. Cut the croissants in half and scoop out the centers. Place the croissants cut-side up into the muffin tin. 3. In a bowl, crack in the eggs. Whisk well, then add in the chopped ham, salt, and pepper. Stir to mix. 4. Carefully scoop the egg mixture into the holes of the croissants. Sprinkle on some cheddar cheese on the top of each, then bake for about 20 minutes. Make sure the eggs are set before removing. 5. Serve with scallions and hot sauce. Enjoy!View original recipe
