Chopped Italian Sandwich

On a large cutting board, lay down the lettuce, provolone, salami, soppressata, prosciutto, sharp cheddar or Gouda, artichokes, and basil. Use a chefs knife to chop up all these ingredients together until they’re finely diced.

Make the truffle balsamic vinaigrette: in a small bowl combine the mustard, balsamic vinegar, honey, truffle oil, plus salt and pepper to taste. Stir to mix, then pour the dressing over the chopped ingredients.

Season the chopped ingredients with crushed red pepper, red wine vinegar, and oregano. Stir to mix.

Serve the chopped mixture in the sandwich buns and enjoy!
