Chocolate Covered Pomegranate & Yogurt Clusters

The MOST addictive (yet still pretty healthy!) sweet treat – chocolate covered fruit & yogurt clusters, this time with pomegranate arils! This may be my favorite version.

What you need
cup plain greek yogurt

cup dark chocolate chips

cup pomegranate arils

tbsp honey
Instructions
In a bowl, combine the pomegranate arils and Greek yogurt. Add in the honey and stir to mix. On a parchment-lined baking sheet, place spoonfuls of the pomegranate mixture, flattening them into disc shapes. Place into the freezer for about an hour, until frozen solid. In a microwave-safe bowl, place the dark chocolate chips plus the coconut oil. Microwave for 30 seconds, stir, and microwave for 30 more seconds or until fully melted. Remove the frozen raspberry discs from the freezer and carefully dunk them into the melted chocolate. Place back into the freezer to harden for 30 minutes.
