Bruschetta & Ricotta Mosaic Toast

A gorgeous and delicious mosaic toast recipe featuring a marinated cherry tomato and garlic mixture, creamy ricotta, and a drizzle of balsamic glaze. Perfect for summer!

What you need

bunch fresh basil

cup cherry tomato

tbsp extra-virgin olive oil
toast

tsp kosher salt

tsp black pepper

tsp red chili flakes

tbsp balsamic vinegar

oz ricotta cheese

clove garlic clove
Instructions
In a large bowl, combine the cherry tomatoes (cut into quarters), minced garlic, extra virgin olive oil, balsamic vinegar, kosher salt, black pepper, and crushed red pepper flakes (to taste). Stir to mix, then use a whisk or other large tool to smash and soften the tomatoes. Allow the mixture to sit and marinate for at least 30 minutes. Lay down the toast. Using a spoon, press down alternating portions of ricotta cheese and the tomato mixture in a scalloped pattern until the whole toast is filled.
