Baked Feta Eggs

This feta egg wrap includes baked feta eggs folded into a warp with avocado & tomatoes wrapped in a warm tortilla.

What you need

yellow cherry tomatoes

green onion

white corn tortillas

avocado

crushed red pepper

black pepper

kosher salt
egg

oz feta
Instructions
1. Preheat oven to 400F. 2. In a small baking dish, lay down the feta and crack in the eggs. Bake for about 15 minutes, or until the eggs are cooked through. 3. Remove from oven and season with salt, pepper, and red pepper flakes. Use a fork to mix the feta and eggs together until evenly combined. It should look like a creamy egg salad. 4. Lay down your tortillas. Fan sliced avocado on the bottom of each. Then spoon 3-4 large spoonfuls of the egg mixture. Top with the quartered tomatoes and sliced green onion, plus hot sauce.
