A love letter to my fav vegetable - the artichoke!

Bring a large pot of water to boil and add in a generous amount of salt. Place in the 2 artichokes to cook, making sure they’re covered by water (or at least mostly covered). Cover the pot and boil the artichokes for 45 minutes-1 hour. You can tell they’re done when you can easily stick a butter knife stuck into the stem area (it should be quite tender). Remove from the water and set aside.

Place butter in a microwaveable dish and microwave for about 30 seconds, or until melted. Add in the garlic and lemon juice.

Serve the cooked artichokes with the butter mixture and a side of the grated cheese. Enjoy!
