BLT Tater Tot Muffins

Preheat oven to 425F. Place bacon strips on a foil-lined baking sheet. Bake for 25 minutes, then place onto a paper towel-lined plate. Once cool enough to handle, rip the bacon into large chunks. Leave oven preheated. Meanwhile, place 5 or 6 frozen tater tots into the holes of a muffin tin. Bake for 10 minutes, until just warmed up. Remove from oven and use a small cup to push the tater tots down into a cup shape. Grate a thick layer of sharp cheddar cheese onto the tater tot cups, then place back into the oven for 20 minutes, until golden brown around the edges. When the tater tots are golden and crisped up, remove them from the muffin tin. In each tater tot cup, add a small bed of romaine lettuce. Then add in the bacon pieces and tomato. Season tomato with salt. Add avocado slices to the top and season with salt, pepper, crushed red pepper, and hot honey. Serve and enjoy immediately!
