In a large bowl, combine the tuna, cucumber, Greek yogurt, dried cranberries, mustard, grapes, salt, apple cider vinegar, and black pepper. On each apple disc, place a couple of cheddar slices. Next, place on a small pile of chopped arugula. Finally, scoop the tuna mixture onto the apples. Enjoy!
