This recipe features a homemade garlic confit, which is then used in a delicious grilled cheese sandwich with Gruyère, sharp cheddar, and American cheeses, cooked in a skillet until golden brown and gooey.

For the garlic confit: 1. Preheat oven to 250 degrees F. In an oven safe baking dish, add in garlic cloves, olive oil, and thyme. Ensure the cloves are fully submerged in oil. 2. Cover and bake in oven until the garlic is golden and tender, about 2 hours. 3. To store, cool down the garlic confit as quickly as possible and put it in an air tight jar in the fridge for up to a week. For the rest of the sandwich: 1. On one side of one piece of bread, spread 5-7 garlic cloves from the garlic confit. 2. On one side of the other piece of bread, evenly spread the Gruyère, sharp cheddar, and American cheeses. 3. Close the sandwich, and spread 1 tablespoon mayonnaise on the outside of one side of the sandwich. 4. Heat a medium cast iron skillet over medium heat. Place the sandwich mayonnaise-side down. 5. Using a sandwich press or another weighted object (like another cast iron skillet), press the sandwich down. 6. Continue cooking and periodically pressing the sandwich, being careful not to let the bread burn. 7. Once the one side is golden brown, spread 1 tablespoon mayonnaise on the top part of the sandwich and flip it over. 8. Continue cooking and pressing until that side is golden brown, and the cheese is melted and gooey.
